Grilled Garlic Bread

Crisp and buttery garlic bread baked in the oven is delicious, but this no-fuss grilled version using olive oil is even better!

Ingredients
1 baguette (French bread)
2/3 cup (150ml) extra-virgin olive oil
2 cloves garlic, peeled and crushed
2 Tbsp roughly chopped rosemary sprigs
Sea salt
Small bamboo skewers, soaked in cold water for 30 minutes

Method
1 Slice bread into rounds, then in half again. Put oil, garlic and rosemary in a large bowl and add bread pieces. Toss everything together, making sure all the bread gets coated with oil.
2 Slide bread pieces onto bamboo skewers, four chunks to each skewer. Garlic bread can be prepared several hours ahead to this point; keep covered.
3 Cook bread over gentle heat on a barbecue hot plate (cast-iron griddle) until golden; if heat is too fierce, the bread will blacken too quickly. Season with a few pinches of salt and serve hot, or add to salads such as Panzanella.
